This is the closest thing to proof there is. Turn everything off, watch the meter for fifteen minutes. Movement means water is escaping somewhere.

The meter test is the simplest. Turn off every tap and water-using appliance, then look at your water meter. If the dial is still moving, water is going somewhere. Other signs: a bill that has climbed without a change in habits, a warm patch on a floor, a musty smell in one room, paint or plaster bubbling, or mould appearing in a spot with no obvious source.
